Ingredients
  

  • 3 lbs bone-in chicken thighs
  • 2 dried guajillo chiles
  • 2 dried ancho chiles
  • 2 dried arbol chiles
  • 4 cloves garlic
  • 1 cinnamon stick
  • 1 tsp cumin seeds
  • 1 tsp coriander seeds
  • 2 bay leaves
  • 1 medium onion chopped
  • 2 cups chicken broth
  • Salt and pepper to taste
  • 12 corn tortillas
  • 1 cup shredded Oaxaca cheese
  • Fresh cilantro and lime wedges for garnish

Instructions
 

  • Toast the dried chiles, then soak in hot water until softened.
  • Blend soaked chiles with garlic, spices, and some broth to create the sauce.
  • Sear chicken thighs, then simmer in the sauce with remaining broth until tender.
  • Shred the chicken and return to the pot to soak in the consomé.
  • Dip tortillas in the consomé, fill with chicken and cheese, then fry until crispy.
  • Serve hot with fresh cilantro and lime wedges.
