Corn Flour Banana Muffins Recipe Card

Ingredients
  

  • 1 ½ cups corn flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • 2 ripe bananas (mashed)
  • ½ cup sugar
  • ¼ cup vegetable oil or melted butter
  • 2 eggs
  • ¼ cup milk (or almond milk)
  • ½ tsp vanilla extract

Instructions
 

  • Preheat oven to 350°F (175°C). Line or grease a muffin tin.
  • In a bowl, mix corn flour, baking powder, baking soda, and salt.
  • In another bowl, whisk mashed bananas, sugar, oil, eggs, milk, and vanilla.
  • Combine wet and dry mixtures. Stir until just blended—don’t overmix.
  • Pour batter into muffin cups, filling each about ¾ full.
  • Bake for 18–22 minutes, or until a toothpick comes out clean.
  • Let cool in the pan for 5 minutes, then transfer to a wire rack.

Notes

Perfect with a cup of coffee or a drizzle of honey on top. Add chocolate chips or chopped walnuts for extra texture.
