½ tsp baking soda

ripe bananas (mashed)
½ cup sugar
¼ cup vegetable oil or melted butter
2 eggs
¼ cup milk (or almond milk)
½ tsp vanilla extract
Instructions
Preheat oven to
350°F (175°C)
. Line or grease a muffin tin.
In a bowl, mix
corn flour
, baking powder, baking soda, and salt.
In another bowl, whisk mashed bananas, sugar, oil, eggs, milk, and vanilla.
Combine wet and dry mixtures. Stir until just blended—don’t overmix.
Pour batter into muffin cups, filling each about ¾ full.
Bake for
18–22 minutes
, or until a toothpick comes out clean.
Let cool in the pan for 5 minutes, then transfer to a wire rack.
Notes
Perfect with a cup of coffee or a drizzle of honey on top. Add chocolate chips or chopped walnuts for extra texture.
