16 oz cream cheese, softened
1/2 cup powdered sugar
1 tsp vanilla extract
1/2 cup graham cracker crumbs (plus more for coating)
Optional: mini chocolate chips, chopped nuts, dried fruit, sprinkles, melted chocolate for coating
Instructions
In a mixing bowl, combine cream cheese, powdered sugar, and vanilla until smooth.
Fold in graham cracker crumbs and any optional mix-ins.
Cover and refrigerate for 30 minutes to firm up.
Scoop and roll into 1-inch balls using your hands.
Coat each ball with desired toppings like crumbs, chocolate, or sprinkles.
Chill again for 15–30 minutes before serving.
Notes
For a vegan version, use dairy-free cream cheese and plant-based toppings.
Store in an airtight container in the fridge for up to 5 days or freeze for longer.
